Mother's Day Breakfast In Bed Ideas

This Mother's Day give your mom one of the best gifts possible: Breakfast in bed! Which of these delicious pancake and coffee combinations will she love the most?

1. Blueberry Pancakes and Irish Breakfast Tea
This tasty combination is sure to wake your mom up in the morning and get her ready for a day of fun.

Pancake Ingredients:

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 3/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 stick butter
  • 1 cup sour cream
  • 1 1/2 cups fresh blueberries.

Directions
1. Sift the dry ingredients together in a mixing bowl.
2. In another bowl, combine the eggs, butter and sour cream.
3. Combine the wet and dry ingredients, then fold in the fresh blueberries.
4. Heat up a non-stick skillet and pour on a 1/4 cup of batter for each pancake. Repeat until you've used all the batter.

Tea Ingredients:

  • Strong black tea, like English Breakfast
  • Milk, to taste
  • Sugar, to taste.

Directions
1. Brew the tea using your Mr. Coffee® Hot Tea Maker.
2. Pour the tea into her favorite mug - or surprise her with a new one - adding milk and sugar as desired.

2. Red Velvet Pancakes and Dark Chocolate Mocha
This chocolatey combination makes for a super indulgent Mother's Day brunch.

Pancake Ingredients:

  • 2 cups flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon cocoa powder, unsweetened
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 teaspoons red food coloring
  • 1 teaspoon apple cider vinegar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract.

Directions
1. Sift together the dry ingredients, then beat in the eggs.
2. Stir in the buttermilk, food coloring, butter, vinegar and vanilla. Be careful not to over-stir.
3. Heat up a nonstick skillet and use 1/4 cup of batter per pancake.

Mocha Ingredients:

  • 1-2 shots espresso
  • 1/2 cup dark chocolate powder
  • 1 cup whole milk
  • Whipped cream, for garnish.

Directions
1.       Fill water reservoir of the Mr. Coffee® Cafe Barista.
2.       Add dark chocolate powder to cappuccino mug.
3.       Add espresso grounds to portafilter and place into position.
4.       Add milk to reservoir.
5.       Choose proper cappuccino setting and brew.
6.       Stir to mix powder and add a sprinkle more to garnish.

3. Buttermilk Pancakes and Black Coffee
There's nothing more traditional - and delicious - than the classic diner-style buttermilk pancake and mug of black coffee. Served with a side of bacon, this dish will is sure to put a smile on mom's face. So turn on your Mr. Coffee® Optimal Brew 10-Cup Programmable Coffee Maker and heat up your griddle!

Ingredients:

  • 3 tablespoons sugar
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 eggs
  • 3 cups buttermilk
  • 4 tablespoons unsalted butter, melted.

Directions
1. Whisk the dry ingredients together in one bowl and the wet ingredients in another.
2. Combine the two bowls until there are just a few small chunks left. Do not over-stir.
3. For larger pancakes, use 1/2 cup of batter per pancake on a heated griddle or non-stick skillet.
