Coffee Cake for The Perfect Brunch

Coffee isn't just for drinking, it also pairs well with homemade baked goods. Coffee cake is a seriously delicious treat to enjoy among a spread of frittatta, fresh bread, orange juice and fruit salad. There are so many varieties of this decadent brunch item it can be hard to know where to start. Here are a few ideas:

As this is a baked good, you'll require a few common items like butter, egg whites, baking powder, flour and salt. Some recipes call for milk, others ask for the eggs to be separated into whites and yolks. Always read the recipe before starting to ensure you have all the required ingredients and that you understand the task ahead. Break out the appropriate pan and grease it if the recipe calls for this action. Next, preheat the oven so it hits optimal temperature and is ready right as you're pouring the tasty batter into the pan.

Believe it or not, many coffee cake recipes don't actually contain coffee! Instead, the bread-like goody is meant to be enjoyed with coffee. What brings out the rich, hearty flavor of a cup of joe? Spices. Think of all those extra little touches you add to your favorite brew to enhance it's taste. Cinnamon, nutmeg and sugar are popular options that make their way into the drink and the cake!

  • Preheat the oven to 400 degrees. 
  • Whisk together one egg, 1/2 cup fat-free milk, 1/2 cup plain fat-free yogurt and three tablespoons of vegetable oil.
  • In a separate bowl, add two cups all purpose flour, 1/2 cup granulated sugar, 4 teaspoons baking powder and a 1/2 teaspoon of salt.
  • Whisk and add to the first bowl.
  • Pour the mix into a lightly greased springform pan and sprinkle it with cinnamon.
  • Bake the coffee cake for 25-30 minutes and enjoy.

The word cake brings to mind a double layer, round baked good that you cut into slices. However, cake comes in many varieties. Perhaps you prefer tiny cakes to make it easier to share at a brunch or portion throughout the week. If so, make coffee cupcakes. Or, if you only want one serving, consider trying out coffee cake in a mug! You'll need:

  • 1 tablespoon of butter
  • 2 tablespoons of flour
  • 1 tablespoons of brown sugar
  • 1/4 teaspoon of cinnamon
  • A sprinkle of nutmeg

Melt the butter into a mug, mix in the flour and the rest of the ingredients, microwave for 60 to 90 seconds and bon appetite. Enjoy your coffee cake with a real cup of joe for a real treat.  

Some coffee cake recipes include sugary frosting to drizzle over the top. You can always opt to leave it out for a more healthy version. Or, make it really decadent with a cream cheese frosting.
