Spicy Grilled Watermelon Salad Recipe

It’s sweet, salty, savory and spicy all in one salad and it makes the perfect side dish for your summer BBQ.

INGREDIENTS

  • 1 medium jalapeno pepper – sliced
  • Juice of one lime
  • 3 cups grilled and diced seedless watermelon
  • 3 tbsp chopped mint leaves
  • 1 medium tomato – peeled, seeded and diced medium
  • ½ cup diced feta
  • 1 small Fresno pepper or red jalapeño – finely diced
  • 2 tsp balsamic vinegar
  • ½ tsp kosher salt (optional)

INSTRUCTIONS

  1. Slice the jalapeño and place it in a small bowl with the lime juice to marinate while you prepare the rest of the ingredients.
  2. Slice the watermelon about ¾” to 1″ thick and in quarters so it is easy to manage.
  3. On a very hot grill pan or grill, grill the watermelon to achieve grill marks and caramelize some of the sugars – about 30-50 seconds per side. When the watermelon is done, cut into large dice and add to your main salad bowl for service.
  4. Add the remaining ingredients and taste for seasoning.
  5. At this point you could add a bit more balsamic, some additional lime juice from the jalapeño marinade, more mint or a bit of salt. Serve.
