Sweet & Spicy Italian Sausage Skillet Lasagna Recipe

INGREDIENTS
- 8 lasagna noodles, boiled to al dente
- 4 oz. mozzarella cheese, shredded or sliced
- 2 cups ricotta cheese
- 6-8 fresh basil leaves
- 1/2 cup Parmesan cheese
- 1 small tomato, sliced
- Sweet & spicy Italian sausage sauce
Sweet & spicy Italian sausage sauce:
- 1/2 lb. sweet Italian sausage, casings removed
- 1/2 lb. spicy Italian sausage, casings removed
- 1 tbsp olive oil
- 28 oz. can crushed tomatoes
- 2 tbsp tomato paste
- 3 cloves garlic, minced
- 4 large basil leaves, chopped
- 1/2 small yellow onion, chopped
- 1 tbsp Italian seasoning
- Salt and pepper to taste
INSTRUCTIONS
Sauce:
- In a skillet over medium heat, add olive oil and sausages. Sauté and break up with a spoon until fully cooked. Add onions and garlic and continue to cook for 5 minutes.
- Add crushed tomatoes, tomato paste, basil, Italian seasoning, salt and pepper and simmer over low heat for 20-30 minutes. Remove from heat and set aside.
Lasagna:
- In a large skillet, add 1/4 cup of the sauce. Layer 4 of the lasagna noodles on top. Spread half of the ricotta cheese over the noodles. Add half of the sausage sauce, then half of the mozzarella cheese.
- Add a second layer by repeating the layering process again. Place down the 4 remaining lasagna noodles, spread the remaining ricotta cheese, and add the remaining sauce and mozzarella cheese.
- For the garnish on top of the lasagna, add slices of tomato, basil leaves, and Parmesan cheese. Bake in a 375 degree F oven for 40-45 minutes, or until the cheese starts to brown and the lasagna is bubbling. Cool for 5-10 minutes before serving.
