Sweet & Spicy Italian Sausage Skillet Lasagna Recipe

INGREDIENTS

  • 8 lasagna noodles, boiled to al dente
  • 4 oz. mozzarella cheese, shredded or sliced
  • 2 cups ricotta cheese
  • 6-8 fresh basil leaves
  • 1/2 cup Parmesan cheese
  • 1 small tomato, sliced
  • Sweet & spicy Italian sausage sauce

Sweet & spicy Italian sausage sauce:

  • 1/2 lb. sweet Italian sausage, casings removed
  • 1/2 lb. spicy Italian sausage, casings removed
  • 1 tbsp olive oil
  • 28 oz. can crushed tomatoes
  • 2 tbsp tomato paste
  • 3 cloves garlic, minced
  • 4 large basil leaves, chopped
  • 1/2 small yellow onion, chopped
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste

INSTRUCTIONS

Sauce:

  1. In a skillet over medium heat, add olive oil and sausages. Sauté and break up with a spoon until fully cooked. Add onions and garlic and continue to cook for 5 minutes.
  2. Add crushed tomatoes, tomato paste, basil, Italian seasoning, salt and pepper and simmer over low heat for 20-30 minutes. Remove from heat and set aside.

Lasagna:

  1. In a large skillet, add 1/4 cup of the sauce. Layer 4 of the lasagna noodles on top. Spread half of the ricotta cheese over the noodles. Add half of the sausage sauce, then half of the mozzarella cheese.
  2. Add a second layer by repeating the layering process again. Place down the 4 remaining lasagna noodles, spread the remaining ricotta cheese, and add the remaining sauce and mozzarella cheese.
  3. For the garnish on top of the lasagna, add slices of tomato, basil leaves, and Parmesan cheese. Bake in a 375 degree F oven for 40-45 minutes, or until the cheese starts to brown and the lasagna is bubbling. Cool for 5-10 minutes before serving.
