Spiced Pistachio Milk Latte with Cardamom-Fig Syrup

Ingredients

  • 2 cups pistachio milk
  • 2 cinnamon sticks
  • 3 whole star anise
  • 1 tablespoon whole cloves
  • 1 cup water
  • 1 cup granulated sugar
  • 4 fresh figs, halved
  • 1 tablespoon cardamom pods
  • Ground coffee or espresso
  • Ground cinnamon, for dusting

Instructions

  1. For the spiced pistachio milk: In a saucepan, combine pistachio milk, cinnamon sticks, star anise, and cloves. Warm gently over low heat for 30 minutes, stirring occasionally. Strain milk and froth until creamy.
  2. For the cardamom-fig syrup: In a separate saucepan over medium heat, combine water and sugar, stirring until sugar dissolves. Add figs and cardamom pods. Reduce heat and simmer gently for 30 minutes. Strain syrup and set aside.
